It looks like you have some soldering experience. A Champ is an easy build, but you might not really use it for much more than a training tool. A Deluxe might be of more use. Phil you can have centered vol controls. Just have the input stages on each end. Your volume controls will be after several gain stages anyway so they're at line level now. Using shielded cable you should still get low hum.
