I was dissappointed/underwhelmed by Orange sound. Most guitar amps, specially if intended to be overdriven, cut some Bass for good reason, or sound becomes mushy when pushed too far (of course Doom players count that as a feature ;) ) Orange does not cut Bass, and suffers from that problem. IF original amp came with those plate resistors, leave them.
The "power/voltage increase" expected will be *absolutely* inaudible, while even slight instability will ruin your sound big time, why risk it for nothing?

Weird.
What´s the voltage at the other end of the power resistors feeding those Zeners?
Does that voltage sag a lot?
Do you have a clean readable schematic to upload? Mine is a murky mess, unreadable values.

That cabinet size is fine. 8 x 10" may be good but then you are spending "real speaker" money, either from Scumback/Celestion/Eminence/Weber, etc. .
