E2/R=P will give you a rough estimate if you can measure your output voltage. Use your voltmeter in peak hold mode. IMHO higher output power gives an increase in bottom end , tighter , cleaner , etc. Cleaner headroom would be the culmination of a few different things , power , circuit , gain stagin...

I second pdf64 advice , remove the output valves and recheck voltages. Even with the low voltages the phase inverter looks like something is going on there. No problem with three 22uf at 500v. Problem with the 100’s for the 80’s. Capacitors in series divide. Just the opposite of resistors , so two 100’s in series would be 50uf , as opposed to 40uf if you had bought 80’s. The output tubes were pulled at the time so I’m not sure what effect that would have on it impedance wise.
