Can you get pine boards where you live? That is a good option for the "shell", and 1/2" ply wood for the baffle. As others stated, mdf is a bad idea.

I always prefer 12s. I even use one in my Champ Reverb and even though I play at very low volumes, I think the sound is much better (for my style). It's personal taste of course. I did what Colossal recommends when I built my JM Sig. I put the gain pot on the far left next to the inputs. I love the Josh Smith Sig. in every amp I've tried it in, although I'm not sure if it was EVM12 inspired. Might be though.

I haven't taken the time to look at 5E3 topology, but the Dumble Small Special came to mind. 2 X 12AX7s plus 2 X power tubes. Nice sounding amps and pretty simple for a Dumble. Yeah. That was good. Rick made a point of trying to ask questions that hadn't been asked before in your typical guitar hero interview. I think he did a good job with that in mind.
