I think those Hammond chassis boxes are aluminum. A CNC machine should easily cut aluminum. If you want to use a steel chassis, either you'll need a set of punches, as Stevem points out, or a proper mill.

If it has a tube rectifier, you can change to solid state. That will eliminate the voltage drop inherent in tube rectifiers. This is simple and easily reversible. If you remove the tube, you can build it on the socket pins.

Red plating is obvious and unmistakable. You'll know it when you see it. The red glow inside the plates is going to be the heaters.
I don't know if there is such a thing as red gridding. The grid is wound fine gauge wire. I'm reasonably sure, if overloaded, it disintegrates very quickly.
