Do I have to use a 12AX7EH to replace a 12AX7EH?
..or can I use different 12AX flavors for my 3 premap tubes?

Highly unlikely that you couldn't use different 12AX7 brands as well as many other non 12AX7 varieties.
What amp(s) are you considering rolling some different tubes into?
Cheers,

trying to troubleshoot an issue on a different thread. My Carr Rambler has some weird phantom noise on certain notes

You won't hurt anything by trying different variants of the 12A*7 or the 5751. I've never used the "proper" tubes in any amp I've built (TWs, Dumbles and combinations of both). I trade 'em in and out until I have the least noise without losing the tone I want.
It takes about 15 minutes to find the best sound combination for YOU. Change tubes?,...do it again.
