I have a big stash of 1N4004 diodes...... I know these are a very low ticket item..... I'm no EE...... but checking the specs for these I wonder why they won't work in the rectifier.....
What say y'all?

I don't know what circuit you are planning on using them in but they are rated at 400 @ 1 Amp.
While the 1N4007 is rated at 1000 @ 1 Amp.
So if you are running more than 400 plate volts the 1N004 might not be the best choice.

The diodes in the rectifier should be rated at least for double the voltage, which you get out rectified. You always have voltage peaks due to the interaction of the transformer's inductivity with the electrolytic's capacity, which would kill underrated diodes immediately.
But you can use the 1N4004 in the bias supply w/o any risk!
