SRV - Crossfire (he has a lot of course but the album version is such a well composed solo)
Hendrix - Born Under a Bad Sign (7 minutes of Jimi soloing)
Anybody here a Jason Becker fan? His entire Perpetual Burn album is my favorite shred album ever. I'm not a huge fan of that style but Becker composes some amazing solos on this album.

SRV's live version of Life Without You from In Step. The solo after the monologue (that John Mayer rather embarrassingly borrowed on his Where The Light Is DVD) is electric guitar tone defined. It's 4 minutes long but sounds effortless rather than remotely self-indulgent.
Second would of course be Comfortably Numb. The tone and phrasing is almost without peer.

As much as I love Gilmour, Anastasio and of course Hendrix, I'd have to say :
