MOSFET heat sink connection

How do you tell, by looking at the data sheet, which, if any, of the G,D,S is connected to the package's conductive head sink?

Using my multimeter, I can see that the drain is connected to the heat sink. But I don't see this info on the data sheet.

I think it's pretty uncommon for it to be connected to anything but the drain.

[ I actually think it's pretty much a MOSFET "by definition" kind of thing that it's connected to the drain, but if I say that, a counterexample will certainly appear. ;) ]

I always take an ohm meter and check the resistance between the leads and the back to check for continuity to determine if any pin is common with the back/sink portion of the device. Depending on the device type you would then chose to insulate it from the chassis or ground it.
