Another off the shelf xfmr you could check out is the Classic Tone 40-18085

Has international primaries (100/120/220/230/240)
Dual Secondaries 315-0-315 and 275-0-275 @ 100ma
No Bias tap
5V @ 2a
6.3V @ 2A

Here is mine again, I had a long post about building it. I used a TDS Matchless PT I got from West Labs. His prices have gone up a lot since them. I forgot its specs but it's the 15W one and I hit the Fender listed voltages spot on with it. The OT was the Mission 5E3. What really made the amp IMO was the old '60s EMC/Jensen/ Radio Speakers of Canada I had for it, it's a seemed ceramic 10.
