I'm no expert, but could it be too much power distortion? Awesome build!
this last mod made this amp so versatile, are you using always the same cathode resistor?

You could use different tubes for different sounds, and power scaling to have different output levels.

Matec I took a quick look at the board, and it looks similar to the JTM1 to me...

Just couldn't find C13 in your schematic. It looks like it is between R20 and ground.

I'm at this point of the circuit so far...
