From my experience, relays are pretty tolerant of voltage. A 5 volt relay will work just fine off 9 volts or 12 volts. The schematic you show is a common way to use a relay to switch channels. Use a relay to determine which channel goes to the PI. I don't ground the unused channel, and I've never had any issues. The weber channel switching PCB grounds the unused channel, and it works fine too.

I just set the board on a brick, and wack the eyelet tool with a hammer. Not pretty, but I've had no complaints about the appearance yet.
