Sure, it's obvious that you're new at this stuff. But that's not a problem in itself. I was new at this stuff a few years ago, and asked plenty of similar questions. But there's no short answer! You have to learn how to bias a power section. You have to learn about the various PIs. About power string design, etc., etc.
So, there is no step-by-step guide to converting a Hammond power amp into a usable guitar power amp. But all the info you need to learn is here. You just need to start at the top:

Hammond AO-39 conversion to modified Vox AC-15 Lite

I am thinking I could build the (Hammond AO-39 conversion to modified Vox AC-15 Lite) and instal the preamp jack input just before the volume control and after the tone control cap array in the schematic. In this case I could just not use the preamp part of this build unless I wanted to plug into the front end and use this as a guitar amp instead of a power amp. In the link I provided there is a conversions to build the (Hammond AO-39 conversion to MARSHALL 18 WATT Lite) also which I feel doesn't appear to be as viable for a power amp. What is your advice xtian?

Sure, that AC15 design is a good choice. The 2x EL84 power section is pretty standard, and as you say, you can plug a line-level input right where the volume control is, and use only the power section. Just make a passive FX loop at that point, and you're golden.
