I think I solved the mystery; I had an envelope with some FR 1000V diodes with a 1/2A rating. I did a side by side comparison and they look exactly the same.
So basically they're selling UFXXX7 diodes rated at 1/2A and calling them UF4007....

I wonder if your harshness issue is due to the EL84 grid voltage being too high when overdriven? There should be a capacitor after the master volume as well, and you should have 220 K or thereabouts bias feed resistors. That master volume should be completely isolated from the bias circuit ...
