Although I am not a huge Beatles or Wings fan, I have always loved the solo in Baby I'm Amazed.

I have always been partial to "Can't You Hear Me Knocking" by the the Stones. I don't know if it fits the less notes criteria or not.

Someone different that can achieve impact in his compositions without excessive notes is Tino Izzo. “Dami la Forza” is an example, although there are some runs toward the end:

The Police: Synchronicity 2, or is that II, in the solo Andy Summers rips it up and I don't detect any "notes" at all. Good soundtrack for an old monster rising from its Scottish loch. Absolutely TERRIFYING! Get goosebumps just thinkin' about it. Thanks for asking!

I like sub- or super melodic themes, like the Wings example ^^.. I like all that George Harrison stuff from 70-75. Doubled slide and/or leslie kind of just hammering the point.

I like notes though, too.

Best songs have no real solo. Best solos have no real song. This is why Stairway to Heaven is fracking amazing. Jimmy Page sucks, if I'm honest. It's his strong point.

I'll offer David Gilmour as someone whose work is filled with solos that follow simple melodic lines that excessively packed with trills, triplets, and fancy rolls.

I think it goes without saying, the Kings, particularly Albert and BB are first rate examples of using space to make the point.
