Do you think that had any affect on the tone or feel of the amp, where there any noise issues you found by not having them?

It is so low gain that I did not notice instability issues at all.
Amp sounded good, I did not get to do comparison tests with and without grid stoppers, so I cannot answer that question for you.
The customer absolutely loves it. Been a few years since I built it, still one of his fav amps.

I actually spent the afternoon doing some prep work on the chassis I am going to use for my own build. I'll try to start my own thread for it once it gets going. Tomorrow's I'll be drilling the circuit boards.
