everybody has their tricks and preferences.....
the one thing that I would encourage you to do.... no matter what you do
try to get gear that uses balanced ins and outs...... go over your cables
and rack to isolate the grounds..... and really read the manuals

this alone will make a huge difference no matter what the endevour.....

A big thumbs up on that. Engineering 101. Quality in = Quality out. Any noise you pick up will be multiplied as you add more tracks. XLR or 1/4 inch TRS in and out of your gear.

Rode just released a USB microphone that has gotten some positive reviews it's all ready to just plug in to the computer at ~$349.99 with a headpone out jack so you don't get latency while monitoring your performance. Just a thought it's quick easy and cheap.

Boy it sure can get complicated recording music.
I have been using an H2 Handycam.
I bring it to the gig and the next day I burn a CD on my cheap computer.
I get 3 hours & 10 min. worth of CD headroom on the 2 gig card.
I run it with power from the club so I don't have to spend $ on batteries.
It costs the same as a nice microphone,$200.
It's the neatest little gadget that I've gotten in a LONG time !

There are many axioms in recording. One being, "If you want to, you can easily spend a million dollars recording a session." In the end, if it sounds good and everyone likes it, it was a successful recording. They are called "recording engineers" for a reason.

Been wanting to record for a long time but never had the time to get into it...

I've been reading about it but...

My aim is to keep it blue collared with as little green as possible and keep it simple...

I got a Studio Projects B1 and M-Audio Fast Track Pro.

I have also one old Shure Unidyne.

Garage Band will be explained to me by my 12 year old...

I found a pair of thordarson T-51645h ...... 150 ohm center tapped to 150k
grid input...... I think they came out of an old mil. PA.... they might work well
with a simple SRPP or mu-follower as a stereo pre..... should be able to apply
a V source to the center tap as a phantom power ..... itll color the sound but
so much these days is so uncolored that it could be very pleasant....
